I made a new protein bar recipe this weekend and LOVED it! The texture was amazing and the taste was even better!
I am calling them “Cinnamon Toast Protein Bars”, but honestly I like them better than yummy cinnamon toast! Seriously!
Before I give away the recipe, what 2 secret ingredients do you think made this bar delectable?
Dates and Chickpeas! WHAT???!!! YUCK!!! No, seriously, blended into all of the other ingredients, the dates add sweetness and the chickpeas not only add fiber and protein, but they stick it all together! It adds to the texture! You would NEVER guess…seriously!

***Added on 3/25: A couple of issues people are running into with these. First, make sure you used rolled oats not quick cooking. 2nd, try 1/4 c. applesauce instead of 1/2 c. Every protein powder is different and absorbs liquid differently. So, add the applesauce as needed. The peanut butter I use is Adam’s natural and I store it in the refrigerator. It tends to have a thicker consistency. A few people have tried fresh dates. That should work, but eliminate the applesauce all together if you do. If you don’t like the taste of stevia, you can use splenda or just use less. The dates, protein powder and applesauce make them quite sweet all ready.
