I love Pinterest. Although, sometimes I’m a bit skeptical when someone says, “This is the BEST ice cream EVER!” or something along those lines. This is one of those “pins” that has been floating around for awhile. It’s often titled “2 ingredient banana ice cream” or something along those lines. I was intrigued by the amount of repins that were happening with it. I’ve done something similar, but not with only 2 ingredients. I won’t claim that this is the best ice cream ever, but it’s a great frozen treat when you have a sweet craving! AND, I’ve found it’s so versatile! So, I wanted to show you how easy this is and then give you some ideas for how you can vary it. I think a few more ingredients makes it even better. (FYI: I am NOT a photographer. Pics are just to help you. I love pics with recipes myself.)
First you slice very ripe bananas and freeze them until mostly frozen. If you freeze them until rock hard, it will ruin your blender or food processor. That is the next step. Throw them in the blender and blend until smooth.
You can stop there and call it good. OR, if you want it a bit creamier, add a “milk” of your choice. I added a bit of coconut milk. THEN, I added one of the ingredients for a variation. I added peanut butter. Here’s what it looked like after the milk and PB.
You could eat it like soft serve or stick it in the freezer to harden it up.
There are so many variations to this! How about adding a bit of cool whip or whipped cream, a drizzle of chocolate sauce and a maraschino cherry? Banana split!
