My boys have been requesting No Bake Cookies for weeks. As a kid, our junior high used to have these cookies that you could buy 4 for $1. It was a daily purchase for me! I’m sure my mom appreciated that I spent my lunch money on cookies and fries. I’m not actually sure she knew that’s what my lunch consisted of. One of my friends and I like them so much, we’d make them after school together too as if I didn’t have enough at lunch!
Needless to say, we like No Bake Cookies, but they are obviously high in sugar and fat content so it shouldn’t be a daily lunch choice :) I made them last night and they were calling my name this morning at breakfast. I decided I better figure out how I can turn my oatmeal into a healthier version of the cookie. Here’s what I came up with. I think it was a success! My 10 year old tried my breakfast and asked if I’d make that oatmeal for an after school snack for him and his friend. His friend might think I’m weird to make oatmeal for a snack, but I’m glad he liked it. Here’s the basics of what I did.
